    Look at what is actually wrong with the burner

    Discoloration, spill, erosion at the port edge and a crack are four different conditions and only two of them mean a part. Brass darkens with heat and that alone is not a reason to replace anything.

    Strip, soak and clear

    Caps and rings off, soaked rather than scrubbed, and every port cleared with a gauge rather than a wire that can widen it. A port opened too far burns as badly as a port half blocked, which is why this is done with a tool and not with whatever is in the drawer.

    Reseat and check the flame

    A brass cap has one right position and it is not always obvious. Seated square, the flame ring is even all the way round and sits down on the port; seated proud, it lifts, it clicks and it will not simmer.

    Say plainly what is worth replacing

Why brass is on this page at all

It is a real engineering choice rather than a finish: brass holds its dimensions under repeated heating far better, which is exactly what a burner port needs if the flame is to stay the same shape for twenty years. The trade is that brass discolors, and that it cannot be treated the way a steel burner is treated.

The three things that ruin them

  • Dishwasher detergent. Alkaline, and it strips the surface permanently.
  • Abrasive pads and caustic oven cleaner. Same outcome, faster.
  • A wire pushed through the ports. It widens them unevenly, and an over-opened port gives a lazy, lifting flame that no amount of cleaning fixes.

What a service actually restores

An even ring of blue flame that sits down on the port and holds at the bottom of its range. The simmer is the test, because a burner with narrowed ports will still look fine at full heat and will not hold low. My brass burners have gone dark. Are they finished?

Almost certainly not. Brass discolors with heat — that is what brass does, and on a burner that gets to flame temperature several times a day it happens quickly. It is cosmetic. What is not cosmetic is a crack across the cap, an eroded port edge, or a burner that has lost its shape, and those are visible once it is clean.

Can I put them in the dishwasher?

No. Dishwasher detergent is alkaline and it takes the finish off brass permanently, which is the single most common way these burners get ruined by kindness. Warm water, a soft brush, and time. If something is properly baked on, a longer soak does what a harder scrub should not.

Is this worth paying for, or should I just do it myself?

If you are willing to be patient with a soak and a paper clip, a good deal of it you can do yourself and we would rather you did — it is in the guide on this site. Where the visit earns its money is the gauging: ports that have been opened unevenly by a previous cleaning are the reason a burner will not simmer, and that is not something to judge by eye.
